Home-made from scratch with garden fresh tomatoes and peppers.
6 large white onions, chopped
10 jalapeños, chopped
3 cups white vinegar
5 tbs salt
3 tbs sugar (optional)
2 tsp red pepper
2 tsp garlic powder
3 tbs cornstarch
2 cans 6 oz tomato paste
Instructions
For removing skins from tomatoes: place tomatoes in large pot and bring to boil, drain, add cold water, and ice to cool; ready to peel. Remove tomato from water, peel skin, cut off end with stem and place in large bowl. Place tomatoes in food processor and chop. Pour into large cooking pot.
Peel onions and place in food processor to chop; pour into cooking pot with tomatoes.
Cut end off of jalapeños with stem, place whole pepper with seeds in food processor and chop, add to pot with tomatoes.
Stir in vinegar, salt, sugar, red pepper, garlic powder, and stir; in small cup add 1 tbs of water to cornstarch and add to pot; add tomato paste, and stir.
Bring to boil and cook for 5 minutes.
Pour into clean canning jars; place in water bath for 5 minutes; remove and let cool.
