Cream of Chicken
Cream of Celery

3 tablespoons butter
1/2 cup finely chopped celery, mushrooms, or chicken
4 tablespoons flour
1 cup chicken broth, water, milk, or cream.
Optinal: chopped onion, garlic
Saute your veggies, mushrooms, or chicken in the butter to help them release their flavor. Stir in flour until smooth paste is formed; add broth or cream or combination of both making a total of 1 cup liquid; stir in salt and pepper. Simmer until desired thickness is reached and use anywhere you would use tin can cream of ------ soup.
Makes equivalent of (1) 10-12 oz can of soup.
